Quinoa Salad with Fresh Plums and Herbs

This recipe was inspired by Heidi Swanson’s fabulous cookbooks, Super Natural Cooking and Super Natural Every Day. Feel free to substitute other seasonal fruit for the plums – peaches would be superb. This salad shows off the bounty of even the most modest herb garden. Try adding chives, parsley, arugula or cilantro to the mix.

Ginger Lime Dressing

This dressing plays up a classic Indian flavor combination.   Toss with greens of choice along with chunks of cucumber, radish, tomato and slivered onions.  In the height of summer, toss in lots of cubed watermelon in place of the tomato for a refreshingly sweet crisp treat.   You’ll find chaat masala (an Indian spice blend) sold at Indian markets.  Don’t be put off by its pungent fragrance – just a pinch provides an addictively sweet/tart flavor unlike any other.

Ingredients:

  • 1 tsp grated lime zest
  • 2 Tbsp fresh lime juice
  • Salt and freshly ground pepper
  • 6 Tbsp light olive oil
  • ½ to one Tbsp minced fresh ginger
  • 2 Tbsp chopped fresh mint
  • 2 Tbsp chopped fresh cilantro
  • Pinch of chaat masala (optional)

Method:

  1. Combine ingredients in a clean, empty jelly jar and shake well.
  2. Let dressing sit for at least one half hour to fully meld the flavors.

Lime and Fresh Mint Vinaigrette

This recipe comes from Deborah Madison’s Vegetarian Cooking for Everyone.  If you don’t already own this cookbook, check it out.  It’s a fabulous resource that makes vegetarian food accessible to everyone.

Use this dressing on top of cucumbers, delicate lettuces, rice and melon salads.

Makes about ½ cup

Ingredients:

  • 1 tsp grated or minced lime zest
  • 2 tablespoons fresh lime juice
  • salt
  • 5-6 tablespoons light olive oil
  • 2 scallions, including an inch of greens, thinly sliced into rounds
  • 2 tablespoons chopped fresh mint or 2 teaspoons dried, crumbled

Method:

  1. Combine zest, juice and ¼ tsp salt, then whisk in the oil.
  2. Stir in the scallions and mint.
  3. Taste and correct the seasonings for balance if needed.
