Lentil Salad with Sun-dried Tomato Vinaigrette This dish was inspired by my friend, Jane’s trick of puréeing sun-dried tomatoes with oil and vinegar for a bold, flavor-packed dressing that livens up simple lentils.  Even those Sun-dried Tomato Vinaigrettewho dislike the chewy texture of the dried fruit will love this zippy salad.  Vary the vegetables as you like.  Add chopped celery, fennel or radishes, or a handful of fresh herbs such as parsley, basil or dill.  Omit the feta for a vegan option.  Use brown or green lentils that remain whole with cooking, such as Spanish Pardina lentils or French lentilles Du Puy.

English Peas Sauteed with Lettuce

This French-inspired recipe is loose and forgiving in proportion and spirit.  Add more peas if you like, or less.  You might spruce it up with a dollop of creme fraiche just before serving or add a splash of white wine instead of stock while cooking.  A small handful of chopped herbs such as chives, basil or mint would be nice as well.

Ribollita

This classic Italian vegetable stew is hearty and heathy—loaded with beans, leafy greens and a comforting layer of artisan bread at the bottom of the bowl.  You can vary the ingredients depending on what you find in the market, or tucked into the crisper drawer at home.  Try a bit of zucchini or cauliflower.  Turnips or parsnips would be perfect, too.  A Parmesan cheese rind (an inch or two) tossed into the broth, as the soup simmers, is an old Italian trick that adds wonderful flavor.  But no worries if you don’t have one, just add a bit more salt and a healthy sprinkling of Parmesan on each serving.

Ribollita is more of a stew than a soup, if you prefer something more brothy, simply add a bit more stock (or water combined with a tablespoon or two of tomato paste) to the mix—up to two cups.

Trader Joe’s Banana Strawberry Muffins

These muffins are not only delicious and filling, but another great part about making this recipe is that the muffins are very flexible. Since this muffin showcases so many different flavors and textures, it is easy to add a personal tweak to the muffins, but they are still guaranteed to be healthy and flavorful. They are easy to make, since you use a muffin mix, but they are also personalized, since you can pick and choose the extras. You can add chocolate or not, strawberries or not, walnuts or not. Any way you choose, the muffins are guaranteed to taste superb. Overall, this is a quick and tasty muffin that we definitely recommend.

Easy Banana Strawberry Muffins

Sparkling Banana Strawberry Muffin

These delicious, fluffy muffins will have you in awe once you take your first bite. The best part of this recipe is that it is flexible, and you can remove any ingredients (other than the banana mix) to suit your purposes. This is useful for mornings when you want to have something delicious, but don’t have the time to make it from scratch. If you want a really moist muffin, use two bananas but if you want a more “cakey” muffin, use one.
